Production of our Agave Gin begins with Fair Trade, Colorado Department of Agriculture Certified 100% Organic Raw Blue Agave fermented in small 250 gallon tanks. Each batch is then distilled in custom copper stills hand-built in Colorado. A Gin basket holding a special blend of hand-picked Colorado Juniper berries, along with other herbs and botanicals, is attached to the top of the distillation column to allow the alcohol vapors to pass through and pick up this intensely flavorful and sweet Gin. Our Agave Gin is then left to rest in newly charred and toasted Brand New North American White Oak barrels for 1 month, imbuing a hint of oak and vanilla notes. Be warned however, this Jester is no joke.
